INGREDIENTS
3-5 tips of young asparagus
1½ tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon honey (liquid)
1 teaspoon mustard
pepper
Salt
PREPARATION
1) Peel the beetroot and yellow beetroot and slice them very thinly using a vegetable slicer
2) Whisk together olive oil and lemon juice, stir in honey and mustard and season with pepper and salt
3) Place the sliced beetroot in the dressing and let it sit for 10 minutes
4) Fry the tips of the young asparagus in olive oil and then let cool on the kitchen crepes
5) Arrange the beetroot on a plate in a fan shape, drizzle with the dressing and garnish with the asparagus tips
